Chef / Cook Curriculum

RASA has finally managed to promote a qualification for a Cooks Profession to the Sector Education Training Authority i.e. CATHSSETA based to the restaurant Industry.

The aim of this qualification is to produce a person who can work as a cook hygienically and safely in take away outlets, and steak house or family restaurant (purpose to be discussed).

We had a meeting on the 1st of October with Ocean Basket Head Office Team, News Café and various training providers.

THE DRAFT TOURISM RESILIENCE STRATEGY

The National Department of Tourism (NDT) is embarking on a process of consultation on the Draft Tourism Resilience Strategy. This strategy is in line with the NTSS, which calls for the development of the Tourism Resilience Strategy.

The strategy seeks to promote the development of resilience plans by the tourism sector, in particular tourism businesses, so that they can be able to mitigate and recover during economic crisis. It also highlights possible mitigation measures and emphasises the need to mainstream tourism in future stimulus packages. This is in line with the UNWTO Resilience Committee's recommendations,

We are requesting for your inputs on the Draft Tourism Resilience Strategy below. Please note that the Inputs can be provided until the 29th of June 2013.

FEEDBACK RECEIVED

Am pleased that there is an acknowledgement of the issues surrounding the economic crisis and its effect to tourism. The biggest issue is the cooperation from all institutions in the hospitality industry, to the commitment in ensuring that visitors, local and international are looked after, not ripped off and that our service levels are improved to meet the international standards that we experience in countries such as UK, Dubai and the States. 

One of the biggest downfalls of the Greece tourism in the year of the Olympics and the years thereafter was exactly what I mentioned above. They were over confident, started over charging, became arrogant, rude and had no service. There has been a huge shift since the crunch has come and tourism has started climbing again as a result. 

Ocean Basket is consistently looking at new ways of improving service levels, keeping its prices down and ensuring a Great Experience. As a result of this, we have been inundated with calls and requests for master licenses in countries all over the world. We are currently very successful in 8 different countries with a further 2 countries opening up in the near future. 

I hope that as an industry we can participate in the quest to create a strategy that will help attract tourism from other countries and at the same time take care of the local visitors that visit other areas of our beautiful country.

  • Feedback With all due respect to those who contributed to the draft document, I suggest the following:
  • There are certain tasks that must be met by a chef irrespective of the level at which they operate; these should be specified in simple English;
  • There are different specialisations that fall into the overall category “Chef” ; these should also be specified with descriptions/definitions;
  • As the level at which a Chef operates is raised, there are additional responsibilities that apply; these should both be defined and described;
  • The overall document should be understood by both the hospitality industry and the normal person. Personally I have no knowledge of the responsibilities/qualifications of a Chef du Partie or a Chef de maison, or a chef du patisserie. This should be included.

  • I have read the document attached to the email and am astounded that there is no mention in the documentation of the impact and danger of TB in the hospitality work place. Can somebody please tell me why this has been overlooked?

SKILLS DEVELOPMENT  

The following Learnerships were offered by CATHSSETA to our members

The Restaurant Association of South Africa managed by RASA Management Services is embarking on a new learnership programme on skills development and employment initiative with Ubuntu Employment on the Food and Beverage and Professional Cookery.

The Objectives of Ubuntu Employment Initiative are

  • To reduce unemployment by providing skills development and employment opportunities to out of school youth.
  • To provide youth with a one-stop shop for vocational career and small business development opportunities.
  • To promote vocational careers and small business development as an attractive and promising alternative to higher education.
  • To increase the skills pool in key growth sectors of the economy.
  • To promote learnerships as a viable recruitment tool for companies.

Last, but certainly not least, we have put together a range of social, informative and networking events every week namely
